Breakfast Sausage

A very delicious breakfast sausage, nice and light not overdone on the spices. Could probably use a little bit of crushed red pepper to kinda spice it up a bit.

Breakfast Sausage

Ingredients

  • 1lb Pork, cubed
  • 1 tsp Kosher Salt
  • 1/4 tsp Fresh Ground Pepper
  • 1/2 tsp Rubbed Sage
  • 1/8 tsp Ground Ginger
  • 1/4 tsp Ground Nutmeg
  • 1/4 tsp Thyme
  • 1/4 tsp Sweet Paprika

Instructions

  1. Cube meat so it will fit into meat grinder, then chill in freezer for 30 minutes
  2. Grind pork through a 3/16″ plate
  3. Mix all other ingredients in bowl and then sprinkle onto ground meat mixing throughly with your hands
  4. Place meat in freezer for 30 min
  5. Grind through 1/4″ plate You can now stuff into cute little breakfast links or bag it and freeze it in patties
